bilo bilo in ginataan
is like the banana in turon.

so I don't blame you for wanting to slurp it without its essence.

I'm guilty of stripping off naked a couple of bananas out of their crispy, tooth-achingly, sugary garments.

Then i keep the garments. And ingest them, hook, line and sinker.

Ay, with the langka on board too.

Oh but pray tell how it is like to have tuyo in the morning without the blandness of the essential cup of rice?

So, you're telling me that the essence of ginatan is in the bilo-bilo. ….No, for me, the essence of this revolutionary dish is in the sweet banana, the sago, the coconut strip and the sticky goo. The blending of these different sweets is a wonderful combination perfect for my very Filipino palate. The bland bilo-bilo is a non-essential, probably added to displace more volume and to make use of the abundant rice flour (before the rice shortage) in this side of the world.
I also believe that the banana and its garments have a different relationship compared with the bilo bilo and the ginatan. The turon is meant to be ingested lock, stock and barrel. Hook, line and sinker. While, the ginatan is meant to be enjoyed as a hodge-podge affair, all elements with its own sweet contribution except the lowly tasteless bilo-bilo.
